Irish Stew - celebrating our heritage
with local produce

Cube 1 kg organic lamb shoulder & bring to boil in 1.2litres of water and a little salt - skim surface and simmer for 30 mins 

Add 125g of peeled potatoes in chunks & simmer another 30 mins - stir to break up potatoes for texture

Add another125g of potatoes, 250g each of carrot, leek & onions with fresh sprigs of thyme - simmer another 30 mins

for health and taste - seek out organic vegetables

To serve:-

Add 250ml cream, 1 Tbsp butter
